If the caster was depending on Fly, they're going to have to make concentration checks to maintain it. The boss monster gets a turn and attempts to break the grapple, or just obliterate the caster who is trapped in melee with them. A full caster's Athletics vs a boss monster's Athletics/Acrobatics.
